Creamy Chicken & Rice Soup
This soup is comfort food, with a semi healthy twist. Plus, it is by far the easiest thing I have ever made while still feeling like I crushed dinnertime. You will have to give me a break, I am pregnant and food was on the brain. I just wanted something yummy, comforting and more importantly, easy. So, this recipe will not hold true to my normal style of cooking {everything being fresh and hand cut} but I promise it will not disappoint.
I am finally starting to get my appetite back and all I can think a about now is food, food and more food. Soup to me is one of those dishes that is good whatever the time of year. It’s loaded with veggies, crockpot produced and packed with yumminess and gives me the satisfaction of happy bellies. Soup is my comfort food for sure and what I love most about it is, just by tweaking one little thing you can come up with many different flavors, ever when there are similar combinations of ingredients. So have fun with this recipe and make it your own.
Large Crock Pot- Place all ingredients in crock pot, in this order
Thin cut chicken tenderloin {the thin cut allows for less cook time}
2 bag of frozen mixed veggies {I used carrots, peas, and corn}
1 bag of frozen veggies {whichever you want to add more of, I prefer corn or peas}
1 half raw yellow onion {chopped}
Two tbsp. chopped garlic
¾ cup of flour {next time I’ll try a flour substitute. If you do please let me know how it turns out!} Sprinkle and even layer
1 cup of wild grain rice
A generous sprinkle or oregano, thyme and parsley
2 bay leaves
1 carton of low sodium chicken broth
3 bouillon cubes {more if you really want to kick up the flavor *beware of sodium though}
Milk/cream- I used Fair Life, Lactose free. {It’s healthier than the heavy whipping cream generally used in cream based soups. Fill to cover 1 inch over ingredients}
Salt and pepper to taste.
It’s really that simple, Cook for 6 hours on low and you have yourself a semi healthy creamy chicken and rice the whole family will enjoy. I served mine with honey biscuits to give it kind of a pot pie feel.
