I call it my Summer Kale Salad but it works well anytime of the year!
Okay, this is hands down one of my most requested recipes during the summer. It is incredibly easy to make {which parents and non-parents alike can appreciate} and kinda fun {if you have kiddos} because you get to get a little dirty in the process. One of my other favorite aspects of this recipes is its KALE, therefore it lasts awhile.
My husband is a fairly large man who enjoys eating healthy and often, so do not be afraid to make it in bulk {like we do} to eat light and healthy whenever your tummy grumbles.
It’s also pretty inexpensive for the amount it makes. In smaller batches, not as money savvy, but still not going to break the bank. Per usual, I never use exact measurements, just a guesstimate, so tweak it all you want to make it your own. In fact, that is actually exactly what I have done. I originally saw a variation of this recipes on, I believe it was called, “Engine 30.” It was a bonus end trailer to “Forks over Knives,” I am sure many of you, like me, went vegan for some period of time after watching that but that’s a whole other subject. Trader Joes is my jam, you can find all but one ingredient there.
Ingredients {Party size serves about 20}
3 bags Pre-cut and cleaned Organic Kale
1 serving Couscous or Quinoa {your choice, or not at all. I make all variations} –Cook as package directs, I usually use a chicken stock
At least 5 large lemons: Juice lemons, discarding seeds and peels {or lemon juice concentrate…it’s just not as potent. We like citrusy foods so I always add more}
At least 5 medium to large avocados: pitted and skinned {the more you add the creamier it becomes, we prefer more}
2 whole bags of sundried tomatoes
1 crushed bag of cashew {hint: buying the pieces verses wholes is cheaper and makes for less work}
¼ Cup of Olive oil
Sea salt {to taste}
Pepper {to taste}
Red pepper flakes {pinch}
Garlic powder {just a sprinkle}
And last but definitely not least, my secret ingredient… about 5 dashes of Tapatio
Here is where the fun begins: Add all ingredients into a large mixing bowl and start smashing…you heard me right, wash those hands, roll up your sleeves and dig in. Get your kids involved and be the coolest Mama ever by letting them play with their food. It’s the easiest way to get every bit of the greens covered and avocados smooth. Bon appetite
